GlenAllachie’s new ‘Sinteis’ series is Billy Walker’s experiment in marrying two distinct, different cask types into a single whisky: in this case, virgin French oak and 1st-fill Oloroso sherry. Aged 11 years and bottled at full cask strength without chillfiltration, it is a bold but surprisingly easy-drinking single malt with hints of maple syrup, baking spice, buttered pastry, candied nuts, and rich, dark, macerated fruit.
