Crafted in Midleton’s experimental micro-distillery, this is a classic single pot still whiskey aged first in ex-bourbon casks and then finished in virgin Garryana oak, a rare species native to America’s Pacific Northwest. Notes of butterscotch, maraschino cherry, shortbread cookie, & buttery pastry are supported by an earthiness specific to the finishing cask.
