The 2018 Extra Brut Les Fervins 7 Cepages is a blend of the seven permitted varieties in Champagne, more or less in equal proportion. Lemon confit, white pepper, slate, mint, sage and dried flowers open first, before brisk acids put it all together on the mid-palate and finish. This is another gorgeous and distinctive wine in the range. Dosage is 1 gram per liter. Disgorged: March 2023.
