Coolship Cerise is our spontaneous beer aged with a blend of Maine-grown cherries, including Balaton and Montmorency. Using local cherries makes our Cerise uniquely Maine, just like us.

Like Allagash's Balaton bottling, the Coolship Cerise is also brewed with cherries (as the name suggests), but this one uses a mix of Maine-grown Balaton and Montmorency varieties. The result is similar, with forward cherry flavors dominating the nose and palate, but it's also a bit riper than the Balaton, with flavors more reminiscent of cherry pie and hard candies. The woody element is still there, as the Cerise is also aged in oak, but it shows a more earthy mushroom and forest floor character. Cinnamon and clove marry into the red-berry-flavored finish, with a hint of tart acidity lingering on the close.
