Winemaker's Notes
In the dry air of Mount Etna the white grapes of Minnella, Grecanico, Catarratto, di Coda di Volpe, Insolia and Caricante are tied on the cellar beams to dry and cover with mold. We press their little juice and let them ferment in the winter on the powerful natural yeasts of the place.
